Marinating recipes that makes dishes more appealing
Marinating dishes before cooking help them absorb spices evenly and dishes will taste more delicious and attractive after being cooked. Followings are some small notes when marinating dishes will help your dished more perfect.
1. Fish marinating
Grilled salmon fillet, zucchini & beetroot cannelloni stuffed with black olives tapenade, arugula in cumin perfume, leaf lemon emulsion
Fish will taste better if marinated with lemon juice, but you should not marinate too long. Otherwise, lemonade will somehow cook fish.
2. Meat marinating
Crusted red tuna with thyme & sesame, mushroom & asparagus risotto in wasabi, ginger red wine sauce
Besides olive oil, you can also use other types of oil (sesame oil) or alternative liquid (soy sauce, red wine, orange juice …) when marinating meat. Orange juice is a secret that makes the barbecue not dry and hard. You need to prepare enough marinating liquid mixture (at least 250ml of water for 1kg of meat).
The longer you marinate the more spices the meat absorbs. Marinating time also depends on your dishes.
3. Some others
Salmon tartar with mellow goat cheese & pink pepper corn, dry fruits & herbs dressing
For the simple marinating dishes, you can mix fragrant herbs with olive oil, add a little mustard, shallots, garlic, pepper …
Note: Avoid using aluminum devices in marinating dishes, use glass dishes, stainless steel or porcelain. When chilling new spices should be used, it will make food more fragrant than the old ones.
